I have to admit I love Vaillon - it is my favourite Chablis 1er Cru. The vineyard is on the left bank and is less sun-drenched than Montee de Tonnerre. That makes for a fresher, racier wine with a steely spine. The Vaillon 2020 from Lamblin has classic aromas of lemon/lime zest, crushed rock and oyster shell. In the mouth it is elegant and textured, very much driven by the zingy acidity and salty soil tang. This is no flabby Chablis - it is refreshing, and vibrant, with purity and great drive. To quote Bryan Adams it “cuts like a knife”. Wonderful value too!
Wine Enthusiast - Anna Lee C Iijima
Fresh in fruit yet invigorating and steely, this ripe but quintessential Chablis highlights zesty, limestone-scented flavors of lemon, lime and green apple. Medium bodied and bracing in style, the wine is delightful young but should improve through 2035.
