Jasper Morris MW
Matured in old 228 litre barrels after fermentation in tank, racked to barrel after malolactic. Romain aims to limit the reduction this way. To be bottled in March 2021. Pale primrose with a delicious healthy bouquet, an excellent balance between the fruit and the stones. Just the right touch of iodine reduction at the back, more complete, a certain, softness at the finish. Tasted: July 2020

The 2019 Chablis Butteaux 1er Cru has an attractive nose of mineral-driven citrus fruit, displaying fine delineation and focus. The palate is medium-bodied with a viscous opening, and slightly honeyed in texture (not flavor). White tea and chamomile infuse the citrus fruit on the finish. This should age with style. (Drink between 2023-2036)
