Deep garnet. Initially the most closed of the trio but with some air there was a change in personality. Whilst Les Mitans is seductive in style, Les Caillerets is more about restraint and length. There’s fresh red fruits and lifted baking spices. The flavours are deep with a mineral tinge so typical of this stony vineyard. It’s all about the terroir. Energetic and very long this is a stylish Volnay to pop in the cellar.
